Navajo Corn Maiden Drum
Maize was introduced into the diet of non-indigenous Americans without the necessary cultural knowledge acquired over thousands of years. The result was tragic. In the late 1800's a pellagra epidemic spread across the southern U.S. The invaders, disdainful of tradition they did not understand, neglected to put ash into the meal. The alkaline ash was necessary to release nutrients locked up in the corn. If you see the phrase "processed with alkali" printed on a package containing a corn product, this is why.
