Freezing Foods
Eggs
We learned this a few
years ago while picking up some eggs at a farmers market. Mix the yolks and egg
whites together, and pour into an ice cube tray. Two cubes equal one large egg.
Milk
Yes, milk can be frozen.
Make sure and store the milk in its original container, however pour out enough
milk to allow for expansion – approximately a cup per gallon of milk. Thaw it
in the refrigerator, and shake well before using.
Butter
Butter also has to be
stored in its original container. Thaw the butter in the refrigerator to use.
Do not thaw the butter outside of the refrigerator! Repeat....thaw in the
refrigerator!
Celery
Wash the celery and chop
it to your desired size. Then, flash freeze it on a tray, and transfer the
celery to a freezer bag or another air-tight container. You can add the frozen celery directly to
soups or other heated dishes.
Tomatoes
Make sure and wash the
tomatoes thoroughly. Then, freeze whole and unpeeled on a tray.Just transfer
the tomatoes to freezer bags. Make sure the tomatoes are fully frozen.
Fresh Herbs
First chop your herbs
finely. Then, place them in an ice cube tray along with a small amount of
water. When it's time to use them - simply drop the frozen cubes directly into
your heated dishes.
Nuts
Nuts can be frozen (either
in shell or shelled) in a freezer bag or another air-tight container.
Zucchini and Other Squash
Like celery, wash and chop
your zucchini/squash to desired your size. Then, blanch for three minutes; make
sure to allow to cool; and then freeze it in an air-tight container.
